Protein Bread Pudding







Hey Beauts 
Excited to share this one as its a nice change up from the normal Oat breakfast recipes you see EVERYWHERE! Also it might show some people that bread IS NOT THE DEVIL and is the perfect PWO carb source just like Oats, Rice or whatever you like to have! So Beauts don't fear the Loaf 🍞πŸ₯πŸ₯–

What breads do I normally buy? Well having a wheat allergy means i'm more limited than most people. Plus most 'gluten free/wheat free' breads are DISGUSTING - hands up who agrees πŸ™‹‍♀️! So luckily for me my body is good with Spelt so I normally go for a Spelt and Honey loaf 🍯 which id actually recommend to anyone, wheat free or not its such a gorgoeus bread ! Also lately I've been picking up aldis white gluten free loaf which is actually one of the nicer ones I've tried! Unlike the spelt it is basically fat free so its a better option for pwo! I'm open to all other suggestions on wheat free as you know me ill try anything at least once so let me know πŸ˜‰


Now so lets get going on this tasty dish! for me this is normally a breakfast meal because 
1. I work train in the am so need something filling straight afterwards
2. Its basically fat free which is perfect pwo with a higher carbs and protein
3. I like to start my day sweet 🍬🍩🍭
But there is no rules as always eat whenever you like πŸ˜‰ Perfect for a 'healthier' dessert too.
🚫God I hate using healthier and unhealthy to label food but you get my drift🚫

What you need
  • 2 slices of bread of choice
  • 1-2 egg whites (depending on macros u want i normally use 50g liquid whites)
  • 10-20 g whey (again depending on macros)
  • 60 ml milk of choice
  • berries/banana/fruit of choice
  • sweeteners / flavoured syrups if you need something extra πŸ˜‰

Spray or grease an oven proof dish well, I use fry-light! cube up your bread and add to the dish.

In a blender/nutribullet add in your milk,whey,egg whites and sweetener and blitz.
Pour the mix over the cubed bread and add in your fruit.
You can leave as is or else do what i like to do and mash the whole lot up so its like a cake!
Leave to sit in the fridge for a minimum 30 mins, i normally prepare the night before so it gets all night to soak!
Bake in a pre-heated oven at 200 degrees for 25mins and BOOM you are done, simples! Dont forget the TOPPINGS either, no rules here, anything goes in Pops' Kitchen so why not in yours too 😜🍬🍨 My normal topping on breakfast food is some variation of fruit,greek yogurt and nut butter, with a few Slutty Carbs thrown in there too since its pwo #whenyouknowyouknow 😜

Eat straight from the dish or else plonk on a plate
and start decorating ↓

For my most recent one shown in the pics above I used mixed frozen berries and birthday cake flavoured whey which was a smashing combo! I've also used Cacao powder, Chocolate whey and Banana all together too which i think is actually the best combo so if you have got the extra carbs to spare try that one! It looks like crap as you can see below haha but i promise its delicious! A bit of Peanut butter on that now and your day would be made 😍

Quinoa 'Proats'

Ok so I know its not really right to call these 'Proats' as there is no 'oats' involved, nope ✋just Quinoa, but right now it will have to do until the perfect name pops into that little brain if mine πŸ’­


Now guys please bare in mind this is my most rushed post yet! It wasn't planned at all as it just started as a breakfast experiment yesterday morning with some Quinoa I had got from Discount Supplements! I've been dying to try it for so long as its naturally Gluten free and hoped it would make another great Carb addition to my daily foodie life 🐷

So me being me πŸ™ƒ wanted to do things differently. So rather than cooking it up savoury to go with a salad or my dinner I decided I wanted to try a sweet version 🍬 Now you will all probably know sweet breakfasts are my THAAANG so it was a no brainer, Breakfast it was 🀷‍♂️

After I posted it I got loads of messages asking all about it and the how to so I said i'd better get cracking with the recipe as its so simple anyway πŸ€”

Oh but first while I'm at it here's another few fun facts you might be interested in 😎
🍬Quinoa is one of the few grains that contains all nine essential amino acids
🍫Its  naturally Gluten Free
🍬 Great source of fiber

Some may even call it a "superfood" but we know those things don't exist 🀣 Will leave that for you to decide 🀷‍♂️

Now moving along let's get started πŸ‘
So this was how i made yesterday mornings bowl, I could be doing it totally wrong, i've no idea, but it was my first attempt so please don't hate and bare with me πŸ™

What you need

60g Quinoa(dry weight)
100ml liquid egg whites
10g chocolate whey
This Quinoa is from discount supplements
and its the first one i've ever tried out, its from an Irish Company
too so win win ☘
5g raw cacao powder
Cold Water

So in a saucepan I added in my Quinoa and Water (for amount of water to use weigh out like you would rice, 1 cup quinoa : 2 cups water) brought to the boil, covered and let simmer for 10-15 mins. I panic a bit when lids are on my pots as I can't see whats going on πŸ™Šso I did have a couple of peeps and gave it a few stirs while I was at it. Once id say 95% of the water had been absorbed i added in my whey protein powder and cacao, gave it all a good mix and then added in my egg whites. at this point, on a low heat, I kept stirring until the whites had cooked as i was afraid everything might start to stick. I knew it was going to be good at this stage as it just looked like a creamy chocolatey bowl of absolute yum 😍 With the texture on par with how I like my Oats, just like CEMENT 🀣 Ain't nobody got time for runny Oats 😷 We like it thick and creamy 😍 i served up straight away in my bowl and topped it with some Greek yogurt, melted strawberries and smooth natural peanut butter.



Like everything this recipe should be easily adjustable to suit your own macros, taste etc... 
Add some extra whey protein, change up the toppings, cook in milk instead of water, just like Oats id imagine anything goes !




Now the ideas I have for this in the future are endless, there is so much you can do with Oats so lets see if Quinoa can do the same!

Shopping Essentials

Time for a rare non-recipe post. My shopping essentials, something I get asked about quite a bit so I thought id share my weekly buys and where I buy them from! I love a bargain so always have my eyes peeled in the supermarkets πŸ˜‰

Now guys just so you know, im no clean eater πŸ˜‚ Flexible Dieting and Balance always for me ⚖ My basket is always 80/90% whole foods with some room in the corner for the "slutty foods" πŸ˜‚ I follow a High Carb, High Protein, lower/moderate fat plan so my shopping list is based around this! So its not going to suit everyone but hopefully you can get some ideas from it.

Most of my shopping is done in Aldi, i'm forever preaching about the place as those who are following my Instagram will be aware of! They have seriously stepped up their game over the last 12 Months when it comes to healthy food! (I hate saying "healthy" and "not healthy" because there isnt such thing πŸ˜‚ but you get my drift) Obviously the basics were always available fruit meat eggs veg etc but they have lately introduced things like raw cacao powder, 0% Greek yogurt and almond milk which is major for me as it means less trips elsewhere to get my weekly shop in! And being one of the cheaper supermarkets out there this is a win win situation for everyone!

Unless your an Aldi snob of course? Do those people still exist? haha

So ill start with Aldi, here's how my trolley normally looks

The basics
Fresh and frozen fruit and vegtables

Turkey steaks/mince
Turkey rashers - new on the scene in my local Aldi
4% Beef Mince
3% and 5% Beef Burgers πŸ” - more newbies
Ham fillet or a Whole Chicken (slow cooked each week for week worth of lunches)
Beef Medallions πŸ„ - I slice these into strips for my Sizzling Beef Recipe 
Nuts 🌰 Almonds and Cashews are my FAV'S!!
Coffee ☕ The Alcafe Barista Americano is identical to Nescafe Azera!

Star Finds you need to buy!
0% Greek yogurt - 1/2 the price of Liberte and Glenisk
Unsweetened almond milk - cheaper than any other brand
Falafel's - Moroccan and beetroot are my fav, great lunchbox filers!
Light cheese triangles - love these on my toasted oat bread and great macros for cheese!
Skyr yogurt pots - another new find for me, less than half the price of the skyr yogurts in Tescos although carbs are high so might not suit everyone.
Flavoured greek yogurt pots, macros in these proabbly suit more people than the Skyr, fat free with a nice protein hit in there too. The Coconut and Vanilla one is my fav 😍

Extras
Beef Stock cubes - the only one of the flavours (unfortunatley) that are Gluten Free
Spices, Tinned Tomatoes, Passata, Tomtoe Puree
Gluten Free Treats - Their All-Butter Cookies are just ✋😍
Gluten Free Wholegrain Rolls, they freeze pretty well so are handy to have for back up
Fat Free yogurts - basically a copy of muller light, The Dark Chocolate Mint and Custard & Banana Flavours are WOW
Pickled Gherkins and Beetroot

Babyfood Section - Apple puree, great in oats or for baking in recipes that call for apple sauce. Raspberry Rice Cakes - great for those looking for low carb sweet snacks πŸͺ

I reckon Dealz is the reason behind a lot of peoples Flex Bowls every night - because it plays a big part in mine 🀣 So a large part of my nightbowl sweets and treats are bought here!
Rice cake bars, pombear crisps
John west tuna - often do 3 large cans for 3euro
Pepsi max - 4 cans for 1.50 - absolute barg πŸ˜‰

Holland and Barret/Full of Beans(local health store)
Both can be quite expensive but Holland and Barret is great for sales - like their buy 1 get one for a cent sale that they run every now and again is brilliant! When this is on I pick up a bottle of sweet freedom choc shot, goji berries, Apple cidre Vinegar and 1kg tub of meridian peanut butter. Anything else bought in these shops is never a need always a want πŸ˜‰ Protein bars etc.

Meat varies for me, my local butcher does the best steak around and you know me I love my meat so i'm lucky to have such easy access to great steak at a great price! My chicken fillets I normally get from Scallons food factory where you can buy in bulk and they work out around a euro each or less depending on size. Every couple of weeks i'll put in a turkey burger order with Kerrigans or else Dublin meat company and ill normally order a few extra bits from them while im at it 😜, Kerrigans chicken burgers are to die for and their steak is fab! Dublin meat company do really good cajun turkey steaks which id highly recommend if placing an order!

So that's all I think anyway guys, its hard to put a price on what I spend each week on food as you know yourself some weeks you need more than others! Some weeks I need meat, others i don't need any etc!
One thing i have been working on though lately is sticking to one shopping trip per week, I had an awful habit of popping in just 'cause' and spending another small fortune on stuff I really didn't need! Now when we do our shop on a Sunday that's us done for breakfast lunches and dinners for the week. Best feeling ever having a house full of food on a Sunday night πŸ˜… Who doesn't love the look of a full fridge 🐷

Fakeaway - Sizzling Beef in Black Pepper Sauce

This dish is up there in my top 2 own creation Fakeaways - Along with my Chicken Satay πŸ˜‹ I only came up with the recipe a few weeks back, and like I said on my Instagram that night boy did I blow my own trumpet after it! πŸ“―πŸ“― It didn't even need any tweaking, just somehow turned out fab on the first go! To my taste buds anyway! It's got a good spicy kick to it so adjust the recipe as you please! Don't leave the amount of ingredients put you off, 30 mins max is all it will take to make, and worth every minute, promise!! A great one to make at the weekend if your the type that finds it hard to stay clear of the Chinese! Once you give this a go you will never look back and you will have it whipped up quicker than the delivery guy can make it to your door πŸƒ

So lets get cracking.....

Serves 1 -

Beef of Choice - I use Aldi's Beef Medallions and cut them into strips
As many veggies as you like - The more the merrier 🌈 Onions and peppers are my daily staple! But I always have at least 3 different veggies at dinner so whatever else is in the fridge, carrots, green beans, broccoli, red cabbage, white cabbage, peas etc.



Start by frying off your Veggies - I don't like my beef over done so I allow the veggies to soften first for a couple of minutes while I get the sauce ready

Below is what you need

1/2 tsp chili
1/2 ts ginger
1 crushed garlic clove/garlic seasoning/grauales etc
3 tsp soy sauce
3 tsp oyster sauce
1 tsp worcester sauce
1 tsp stevia sweetener
1/2 beef stock cube

As much or as little black peppercorns as you like - I like a lot so a good handful for me πŸ€—





Add all the above into a cup with about 30-60mls of water, 30 if you like a thick sauce (like me) and more if you prefer it a bit more runny!



Add beef to the pan with the softened veggies and brown either side before adding in your sauce! Turn up the heat and watch it sizzle! After 3-4 mins of sizzling fun turn it down to med-low heat until sauce thickens and your veg and beef is cooked to your liking!




I'm an amazing photographer I know πŸ˜‚ - pictures don't do this dish justice at all, but like I said earlier you have to trust me on this one! I love it with chips🍟 (like most of my meals as most of you will know I need my daily spud dose πŸ˜‰ ) but try it with noodles or rice, with salad for a lower carb option, in a wrap, it will go with anything!

Sweetzza

So not only do I enjoy Cake for Breakfast sometimes i'm fond of a pizza too πŸ•or Sweetzza i should say 🍬 First off i cant believe this recipe isn't here already I could of sworn it was one of my firsts postsπŸ™ˆIts so popular, every time I post one of these creations I get loads of messages looking for the secret πŸ™Š Well some of you may be disappointed as their isn't really any big secret to making these, its very basic and luckily for all of you i'm guessing you will already all have the ingredients in your fridge! So first off i'll give you the basic recipe to make the base, like all my other posts on here i'll leave some notes afterwards on how to change up quantities/flavours/macros etc!

Base 
  • 100g Egg Whites 
  • 50g Oats
  • 30ml Almond Milk
  • 1/2 tsp baking powder
and boom that's it! Just blend it all up (I use my nutribullet) and pour onto a hot pan until the top starts to bubble, flip over or else finish under the grill if your flipping skills aren't up to scratch πŸ˜‚ The smaller the pan - the thicker the base, the bigger the pan, the thinner the base etc. The pan I normally use is 11inchs/28cm. I wouldn't recommend using a bigger one to be honest as the base will be to thin and probably wont stay solid.

 


So now you have your base, flip it out onto a plate and start topping,anything goes here. I use Aldi's 0% Greek yogurt as my 'Sauce' which gives the Sweetzza
a big protein boost! Although any yogurt here will do, whatever 
you fancy or whatever your macros call for 😜


The same with the toppings there is no right or wrong πŸ«πŸ¬πŸ“
Before it was destroyed in
maple syrup-nom! 
My favourite has to be the sweet and savory combo below which is actually the one I had for breakfast this morning! 

For the base I used the same as the ingredients above but added in 10g of maple flavoured protein pancake mix, topped with greek yogurt, pineapple, bacon, banana, gingerbread latte popcorn and maple syrup! anyone who knows me or follows my instagram will know im all about the weird and wonderful combos when it comes to food πŸ·πŸŒπŸπŸ¬πŸ• especially sweet and savoury together at breakfast, LOVE!!!



I get such a kick out of the fact you
can actually pick up the slices
like a proper pizza πŸ˜‚


Here I used the same ingredients as above but added
in a tsp of raw cacao powder for a chocolate base


With toppings of fruit, marshmallows, peanut butter
and Choc shot!

*NOTES*
So normally the Sweetzzas are my Breakfast which is also my Post Work out meal, hence why they are high Carb and Protein with Minimal Fats as that's how I like to keep these meals! To lower the carbs of the base you could switch out up to half the oats in exchange for protein powder? Id imagine it may be slightly dryer so you may need to use a little more milk. Also I used almond milk but it really doesn't matter what one you use, even water would work! A protein shake would actually be a good option for the liquid too if you had one that needed using up, or some protein milk! Add flavour drops, sweeteners etc to the base if you wish! I normally add chocolate flavour drops to my chocolate base ones! There great to add to the Greek yogurt sauce too if you fancied! 
I've made this before using 1 whole egg and 50g of whites which works perfectly to if you wanted a higher fat option. And obviously just half the ingredients and use a smaller pan for a smaller portion as with all my meals this is quite large 🐷πŸ’ͺπŸ‘

Protein Mug Cake

Hey Guys back with another one of my popular recipes that i'm always been asked about. The Mug Cake 🍡🍰 The plus side of this is its basically fool proof πŸ’All you need is a mug and a microwave, 2 mins prep and 2 mins to cook! I normally use this recipe for breakfast but its a great macro cap as anything goes and it can be adjusted to suit any macro needs! Every time I make one of these I change it up slightly, depending on what flavor I fancy and what toppings i'm planning πŸ˜‰ Like I said I normally have these at breakfast, which for me is post training so I keep it high carb and protein with minimal fat! The base of this recipe is an egg/egg whites, mashed banana, 1/2 tsp of baking powder and oats, whatever you add after that is up to your taste buds! I'll give you a few of my favourite combos and note which ones are best around your training window
This was one of my nightly flexbowls - i'm guessing Christmas time looking at the Cadburys Heros - not ideal straight after training as this one would of been higher in Fats but so yum and perfect to send you off to the land of Nod πŸ˜ͺ





Chocolate Mugcake -
Ideal for pre/post workout
Basic Chocolate Mugcake PWO topped with Greek Yogurt
for added Protein along with PB2. Berries and Coco Pops for
Extra Carbs
40g Oats
1/2 mashed banana (60g)
80g egg whites
5g cacao powder
10g chocolate whey
1/2 tsp of baking powder




















Sweet Mugcake - Perfect dessert or snack anytime of the day
40g oats
1/2 mashed banana 60g
1 whole egg
tsp cinnamon
Handful of berries
1/2 tsp of baking powder

Chocolate PBJ Mugcake - Pre/Post workout
40g oats
1/2 Mashed Banana (60g)
80g egg whites
Handful of Berries
1/2 tsp baking powder
Tblsp PB2
5g raw cacao powder

Cookie Dough Mugcake - Dessert/Snack
40g oats
1/2 mashed banana (60g)
10g chocolate cookies whey
Handful of chocoloate chips
5g raw cacao powder
1/2 tsp baking powder
1 whole egg




Blueberry & Banana Combo, PWO so topped with loads of extra Carbs and
Protein.
Greek Yogurt, PB2. Blueberries, Granola and even some Bon Bons 
Bluberry & Banana Mugcake - Pre/Post Workout
60g Mashed Banana
40g Oats
80g Egg Whites
1/2 tsp baking powder
handful bluberries
10g Banana Whey
Banana Flavour Drops















For each of the above it just a matter of mashing the banana and adding it into your mug along with everything else! stir it up really well and bang in the microwave for 1 minute, have a peep, back in then for 20/30second intervals to keep a close eye on it, mine usually take 2 mins max!!






When making these in the past I've used s little as 20g of oats right up to 60g, no protein powder up to 30g. 1 egg or 50g of egg whites, even 100g of egg whites. Anywhere from 40g plus of mashed Banana, the more the better really as it keeps the cake moist. The choices you make on all of these will just depends on what macros you want to get from the mugcake.

Remember the more you add in the bigger the mug you need, they rise a lot!!!And they will explode - yes I learned this the hard way πŸ™ˆToppings and flavours really are endless! Play around with the recipe, every time you make it you will want to try something new! They are super versatile, so filling and most importantly taste amaze!! I've yet to make one without either oats, banana or an egg/egg white so i'm not sure what result you would get if you subbed out one of these but do let me know if anyone does. Although id imagine apple/any fruit puree would be a good replacement for the banana if you wanted to cut the cabs without losing the moisture! Also don't forget to add stevia, sweeteners to your taste! sometimes I do sometimes I don't, usually depends how brown my banana is 🍌

Cake For Breakfast

Yes it is possible to have Cake for Breakfast 🍰 Remember you can have absolutely anything you want to have! But if cake is what you fancy then i'm about to show you how - with a little imagination you can make your go to 'healthy' Breakfast of Oats into a Fancy Pimped out Cake - that I promise legit tastes like sitting down to Dessert 🐷



People always message me 'how do you eat this, is that not bad for you, etc etc' there is no hidden secret to any of my meals, its just imagination, which thankfully I love to use when it comes to my food ❤ Tweaking meals and like I said pimping them out πŸ˜‰Exactly why I love the IIFYM lifestyle - nothing is off limits, no restrictions. I still keep it 80/20, even 90/10, as i'm all about that balanced life and love my meat oats and veggies just as much as my Reeses πŸ‘ŒThis is what works for me but you need to remember everyone is different, you cant just copy one persons way of eating and expect to get the results they are getting, IIFYM is very individual and everyone is following completely different macros! You need to discover what works for you !

Anyway on with this cake - there is so many variations of this little beauty!! My favourite is my Chocolate and Banana one (pictured above) so ill start with that one but will leave some notes at the end of other flavours, ingredients, substitutes , how to change macros etc.

What you need.....
  • 60g Oats
  • 60g Mashed Banana (browner the better as always)
  • 60-100g grated courgette (the more courgette the more volume and greens πŸ˜‰) 
  • 40ml egg whites or one large egg white
  • 40ml almond milk
  • Tsp of baking powder
  • Tsp of cacao powder
  • 25g chocolate whey

I don't normally add sweeteners as my bananas are always extra brown and naturally sweet but of course add what you wish, stevia, flav drops, honey etc. 


Basically just mix the whole lot up really well in a bowl and transfer into an oven safe dish. I normally line my dish as it kills me if any of the mix sticks to the sides - therefor i'm missing out on some πŸ˜‚ Place into a pre-heated oven at 200 degrees for 25-30 mins.
You want it firm enough to lift out of the tin just like a cake but still moist inside πŸ‘Œ
Eat immediately or leave cool and in the fridge for the following morning. I normally make a few of these at a time as they freeze and defrost so well! Very handy to have in your freezer just to pull out the night before and ready to go the next morning!

Topping ideas are endless, as you have probably seen from my Instagram! Greek yogurt for an extra protein hit, berries, popcorn, peanut butter, i've tried them all and anything goes! Just depends which flavours im feeling at the time ;)

Perfect meal post workout as it's on the higher Carb and Protein Side with minimal Fats, but again this can be adjusted to suit you.


Below is an Apple and Berry Crumble style Cake I made, I used  Apple puree in place of mashed banana, vanilla whey instead of chocolate, left out the cacao and baked some mixed berries inside!



                                             

**Notes**
To lower the carb content just use less Oats or replace the mashed banana with another fruit like apple or berry puree. I've made this cake with as little as 40g Oats and it works perfectly! 
Up the protein by using extra whey or else another egg white.
If you want to add in some fats then peanut butter works really well baked inside or add some chopped nuts.
Don't be afraid of the courgette, it adds so much volume, you cant even taste it with all the other ingredients and its a great way of getting in extra greens!
This recipe works perfect as muffins too! Which might actually suit some people better for a breakfast on the go. Cant wait to see what everyone creates, as always just shout if you have any questions about the recipe or need some help in tweaking it...☺


Oh just before I head, here is some snippets of the chocolate coffee cake version I made this morning! Exactly the same as the Chocolate Banana Recipe but instead of Whey and Almond Milk I used an Iced Latte Protein Coffee Shake (Ufit Shakes)! Id been asked to review the Shake (it gets a 9/10 from me they are so good!) but I hate to drink my calories it feels like such a waste πŸ˜‚ Personally id rather have a meal 🐷 So anytime I do get my hands on shakes I prefer to experiment with different bakes instead and they always work really well especially if they have a good creamy texture like the Ufit range!
